Blueberry Pie is something so simple and easy. Take just a few minutes to put this together and the payoff is scrumptious. You can use store bought pie crust but once you get a taste for homemade it’s hard to go back. I prefer Martha Stewart’s Pate Brisee recipe with the addition of a tablespoon of sugar.
5 cups fresh blueberries
1 cup sugar
4 tablespoons cornstarch
1/2 teaspoon salt
1 tablespoon butter, cut into cubes
1 8 or 9 inch pie crust
Mix first 5 ingredients together in a large bowl and pour into the prepared crust.
At this point you can brush the crust with egg wash and sprinkle with sugar but you roll the way you want.
Bake at 425 for for 50-55 minutes.
