We started making granola bars a few weeks ago out of just a desperation for a portable snack that was healthy, easy to make and affordable. As the weeks wore on I got a bit more adventurous and I think this is my finest version. What’s my motto again? Different strokes for different folks. So roll your own BouBou and make it yours.
2 cups quick cooking oats
2 cups cocoa krispies cereal
1/2 cup chopped pecans
1/4 cup sunflower seeds
1/8 cup chia seeds
1/8 cup flax seeds
1/2 cup dark chocolate chips (I recommend Guitard or Ghiradelli)
6 tablespoon unsalted butter
1/3 cup brown sugar
1/3 cup honey
1-1/2 teaspoon vanilla extract
1 teaspoon Hersheys Special dark chocolate (Dutch) unsweetened baking cocoa
dash of salt
Line a 9 by 13 baking pan with parchment paper (trust me it’s worth it). Set aside.
I like to get all of the dry ingredients (the first 6 listed in this case) in a large wide bowl. Have them ready to mix fast.
Measure out the butter, sugar, salt, honey in a sauce pan on medium heat and bring to a boil (happens fast) and cook for 2 minutes stirring often. Then remove from heat and add the baking cocoa and whisk.
Combine the hot sugar mixture to the dry ingredients and give a few good stirs, then add the chocolate chips and continue to stir. Pour everything into the 9 by 13 pan and press down. What works best for me is to take a measuring cup (it’s ok if its dirty) and give the bottom of it a quick hit of non-stick spray. Use the bottom of the measuring cup to really get everything press down in to the pan tightly. The more you press the better form your bars will have.
Makes about 18 servings. For normal people, not me.
